They can be used whole on the sides of large buttercream cakes, or snapped into pieces for smaller bakes. There is a range of textures here from thin to thick. Some of the larger leaves have a stiff, papery texture and are best removed before serving when used whole, although small pieces of side leaf can be eaten.
