Marigolds have a long and rich history stretching back to the Aztecs. They were brought to Europe and widely used by the Spanish and Portugese, not only as food but as garlands and to make dye for cloth. The flowers come in an array of bright golden and red hues and the whole plant has a citrusy flavour.
